Nicole moved to Dillon in August 2024 and quickly noticed a lack of local organic produce. With over 20 years of experience growing food in Montana, she took action, securing a 4-acre property that became Bee Haven Gardens. In partnership with the non-profit Vibrant Lives, Bee Haven Gardens serves as both a working farm and an educational hub, offering hands-on learning opportunities for the local community and UMW students. Nicole leads seasonal gardening workshops and is actively involved in initiatives such as the Farmers Market, Farm-to-Table events, Food Rx programs, and CSA memberships. Additionally, Bee Haven Gardens supports UMW education, community education, and horticultural therapy while producing value-added products that promote sustainable agriculture. Currently pursuing a Master’s degree in Regenerative Organic Agriculture, Nicole envisions Bee Haven Gardens as a space where people can engage with organic farming techniques, strengthening the local food system and fostering community resilience.
